Creamed Corn

My sister-in-law introduced me to this method of cooking creamed corn.  I’ve never turned back!



6 cups creamed corn (fresh or frozen)

4 slices bacon , browned  and chopped

1 -2 Tablespoons Cornstarch (Optional, but it sure cuts down the cooking time.)

1 – 2 Tablespoons light brown sugar (Optional, depending on how sweet the corn is.)

Salt and Pepper to taste


In a 3-quart saucepot, combine corn, salt, pepper, and cornstarch. Cook over medium-low heat, until slightly thickened.  Add chopped,  cooked bacon and cook until desired thickness.
