I love making homemade desserts and I’d been trying and trying to find the perfect pie crust recipe. I’d see one in a magazine and try it. Not quite what I was looking for. Then I’d hear some “cooking expert” on a radio show share their recipe. Nope. Still not that crumbly, flakey, buttery, can’t-get-enough-of-it taste that I was searching for.
I still made pies every holiday season, and always got compliments, but, I personally, wasn’t satisfied with the flavor or the texture of the crusts.
Then I saw an episode of Heartland Table with chef Amy Theilen. She was making, I believe, a blueberry pie. She had yet another variation of the basic pie dough recipe. I thought, “Okay, let’s try this again.” WOW! It tasted and flaked exactly like I’d known pie crust could! It has elevated my pie making to a whole new level of deliciousness!
This particular pumpkin pie is a combination of two recipes. It starts with a wonderful, flakey crust recipe from chef Amy Theilen. Then, the silky, smooth filling is all my mom’s. I’ve tasted many pumpkin pies over the years, but none have the warm, wonderful spice combination like Mom’s.
